Why We Love This Recipe
This recipe swaps traditional carb-heavy noodles for zucchini noodles (a.k.a. "zoodles"), which are packed with vitamins and low in calories. It's a great option for those managing weight or looking for a lighter alternative to classic chicken noodle soup. Plus, the mason jar storage makes it easy to grab-and-go. “Eating healthy doesn't have to be complicated. With recipes like this, you can nourish your body, enjoy delicious flavors, and stay on track with your weight management goals,” says Elizabeth White, registered dietician at Southern New Hampshire Weight Management.
The Health Benefits
Low-Calorie and Nutrient-Dense: Zucchini noodles are an excellent substitute for pasta, reducing calories while providing fiber, vitamin C, and antioxidants.
Protein-Packed: Chicken breast delivers lean protein to help build and repair muscles and keep you feeling full longer.
Veggie Variety: With carrots, celery, red peppers, and onions, this soup is rich in vitamins, minerals, and antioxidants that support overall health.
Portion Control: By pre-portioning the soup into jars, you’re less likely to overeat, which supports mindful eating habits.

Instructions:
1. Heat olive oil in a large skillet over medium-high heat.
